Aroma: A tantalizing nose of red fruits and pepper.
Taste: Dry palate with lovely, jammy red fruits with hints of nutmeg, black tea and clove. Finishes lighter and with more hints of floral than one might expect.
Food pairing: An excellent partner with game, roasts, and pepper steak.
Additional notes: Hand-harvested from Christian’s higher vineyard called ‘Les Hauts de Madon,’ and are fermented whole-cluster using natural yeast in a cement and resin tank; the grapes undergo carbonic maceration, and are bottled unfiltered with no SO2.
