Aroma: Citrus notes with a pleasant crispness.
Taste: Citrusy, with herbal and savory notes, finishing with some salinity and a firm dry mouthfeel. The interplay between the citrus/herbal flavors, the slight Pet-Nat fizz, and a bit of chalkiness give this wine a very engaging character. It’s a great “hanging out” wine.
Food Pairing: This wine is flexible with food but would be great with appetizers, white meat, salads, and drinking by itself.
Additional Notes: Mirco Mariotti makes wines in the Bosco Eliceo area in the eastern part of Emilia-Romagna, from vines growing just 300 meters from the Adriatic sea. The vines are non-grafted and on their own native rootstock, with roots that dig as deep as two meters in the sandy soil. Fermented fully with native yeasts, a second fermentation is initiated in bottle by adding grape must from the same harvest before sealing the bottle.
